I conclude the unit on food chemistry by asking my students to complete a food chemistry assessment. This test assesses students understanding of the nutrients we tested in the unit, the vitamins we read about, and their ability to read a food label and make a healthy food choice. Students complete 5 matching problems about nutrients, 1 short answer item about the foods we tested, four matching items, and a long answer item about reading a food label.
I use the results of this assessment and the review of their science lab work to form a judgment about student mastery of the content addressed in this unit. A video of me discussing how I assess student work on the short answer and extended response questions can be found here.
