I think that writing science poetry is an excellent opportunity to allow students creativity within a factual world.  More importantly, it encourages them in developing exactly the same skills they will need for the "real" science.  They need to be accurate, and precise in their word choice.  Specifics are encouraged over vague statements.  They look at the whole picture (in the case, a representative animal from each vertebrate class) when discussing an environment.  These are just a few of the ways in which elementary poetry integrates nicely with science content.  You will notice that in the student example she tangentially references topics we have studied:  adaptations, habitat, and animal groups.
